Prepare the Chicken:
Thinly slice the chicken breast into small pieces. You can slightly freeze the chicken to make slicing easier.
Cook the Chicken:
Heat the vegetable oil in a large pan over medium-high heat. Add the chicken slices and cook, stirring frequently, until the chicken is fully cooked and slightly browned.
Add Spices:
Once the chicken is cooked, add paprika, cumin, black pepper, and salt to the pan. Stir well to coat the chicken evenly with the spices.
Add Vegetables:
Add the chopped onion and green peppers (if using) to the pan. Cook for another 3-4 minutes, or until the onions are softened.
Tomatoes and Water:
Add the chopped tomatoes to the pan, followed by 1/2 cup of water. Stir and let it cook until the tomatoes soften and the mixture becomes slightly saucy.
Assemble the Tantuni:
Warm the tortilla wraps or flatbreads. Place a portion of the chicken mixture in the center of each wrap. Sprinkle with chopped parsley and squeeze a little lemon juice on top if desired.
Serve:
Roll the wraps tightly and serve hot. You can also serve with pickles or a side of yogurt.
